Start with hot water between 80–85 degrees. Don’t worry too much, just try to time it before the kettle boils.
Add 2 teaspoons of Hosaku to a bowl and pour in 70 mls of hot water. Whisk it quickly with your Chasen (whisk), like Hoji Kun.
For hot lattes, pour steamed milk into the hojicha mix. And for iced, pour the mixture over the milk. Use all of the hojicha.
Absorb the rich aroma of Hosaku as you admire your creation. Add cinnamon or a light additional dusting of hojicha. Enjoy.
